Mexico GP 2021: Empanadas and Cheesy Stuffed Poblanos with Lime Rice

I love the atmosphere at this race. So many amazing fans and everyone is cheered on equally. Well, at least respectfully… Checo is clearly #1 in everyone’s hearts.

Max won the Mexico City GP handily, and Hamilton fought hard to come in second. Great to see Checo on the podium for the second week in a row, and in his home race. Papa Perez was some of the most genuine joy I have seen in a long time, and celebrations were heartfelt.

For this year’s Mexico City GP we made Corn and Poblano Empanadas and Cheesy Stuffed Poblanos with Pinto Beans served with Lime Rice. To celebrate we made our favorite Margaritas.
